Triple Chocolate Cake

So, I have made this cake several times now, and this was the first time I actually got a slice.  I have made this recipe as cupcakes for a friend, and as a tiered cake for a shower (it was the bottom layer... way to heavy to be on top), and one of many cakes for my grandpa's surprise party last spring... but it was not til my Mom's birthday this past August that I GOT A SLICE.  It is by far the moistest cake ever.  Period.  DISCLAIMER:  I don't typically like chocolate cake, or chocolate frosting, but this cake changed my mind.

So the triple chocolate cake - chocolate one: the cake is chocolate.  Two: the frosting is a chocolate buttercream that is to die for.  Three: in the middle is an unseen layer of whipped chocolate ganache.

Hershey's "Perfectly Chocolate" Chocolate Cake



I am not completely sure where I originally came across this recipe for the cake, but I guarantee you won't regret trying it.  It is a easy recipe for sure!

CAKE INGREDIENTS:
  • 2 cups sugar
  • 1-3/4 cups all-purpose flour
  • 3/4 cup HERSHEY'S Cocoa
  • 1-1/2 teaspoons baking powder
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2  eggs
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
INSTRUCTIONS:
1. Heat oven to 350 F.  Grease and Flour two 9" round pans.  (I use 8"... it is what I had)
2. Stir together the sugar, flour, coco, baking powder, baking soda and salt in large bowl.  Add eggs, milk, oil and vanilla; beat on medium speed for 2 minutes.  Stir in boiling water (your batter is going to be crazy thin, like mind blowing thin, just have faith here).  Pour into prepared pans.  
3. Bake for 30-35 minutes or until an inserted toothpick comes out clean.  Cool for 10 minutes before removing from the pan

THE FROSTING:
I went to my pinterest boards to see if I had pinned anything good.  And GOOD LORD I DID.  Please just go ahead and follow the source link below to Cooking Classy.  While you are there, check out more of the recipes there, I am sure you will find some good ones.  Once you try this chocolate frosting, it is the only one you will ever need.  

GANACHE:   Easier than pie.  I put this between the cake layers.  I piped a ring of frosting around the outside to keep it inside the cake much like you would with a jelly filling.  

INGREDIENTS:
  • 9 OZ bittersweet chocolate, chopped (or chips if you are lazy like me)
  • 1 cup heavy cream
DIRECTIONS:
1. place the chocolate in a medium bowl.  Heat the cream in a small sauce pan, over medium heat.  Bring it to just a boil, watching carefully to make sure it does not boil over.  This can happen REALLY fast if you are not careful. Once the cream has come to a boil, pour over the chocolate and whisk until smooth.  
2.  Allow ganache to cool until thick.  Then whip until light and fluffy (a stand mixer with a whisk attachment  is perfect for this)
